6. Because glycine is an amphoteric ion with amino and carboxyl groups, it has a strong buffering effect. It can buffer the taste of salt and vinegar. The amount of salt and acid added was 0.3% ~ 0.7% and 0.05% ~ 0.5% respectively.
The antiseptic effect can inhibit the propagation of Bacillus subtilis and Escherichia coli. Therefore, it can be used as preservative of surimi products and peanut butter, with the addition amount of 1% ~ 2%.
Antioxidant effect (by its metal chelation) can prolong the shelf life of cream, cheese and margarine by 3-4 times. In order to stabilize lard in baked food, 2.5% glucose and 0.5% glycine can be added. Adding 0.1% ~ 0.5% of wheat flour for instant noodle can also play a role of seasoning. In medicine, it is used as acid making agent (hyperacidity of stomach), treatment agent of muscular dystrophy, antidote, etc. It is also the raw material for the synthesis of amino acids such as threonine.
